Lebkuchen Cookies


By the name alone, one can tell this is a good German cookie.

This recipe makes a lot of cookies
Use butter, not margarine
Both cookies and dough freeze well

Ingredients:

  • 1 quart sorghum 
  • 1 lb brown sugar
  • 3/4 lb butter, softened
  • 3/4 lb lard, softened
  • 1 lb blanched almonds. ground
  • 1/4 lb citron, finely chopped
  • 1/4 cup brandy
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 4 tsp anise seed, ground
  • 3 eggs, beaten
  • 3 tsp soda
  • 13 cups flour

Heat sorghum.
Add soda
Remove from heat.

Stir in shortening
Add dry ingredients and brandy

Let stand in cool place for 5 days before baking to allow ingredients to blend

Roll out thin and cut into diamond shapes.

Bake at 375°F.  Watch closely.

Frost with powdered sugar and water frosting.

NOTE:
This cookie is a lot of work.  Once made, you will probably only make it once a year after that.
