Jean's Peanut Brittle


We're not sure why this is named after my sis Regina (nickname Jean) but it is what it is and we all know it as Jean's Peanut Brittle.  Live with it... we do.

Ingredients:

  • 1 1/2 cup salted peanuts
  • 1 cup light or dark corn syrup
  • 1 cup sugar
  • 1/4 cup water
  • 2 tbsp butter
  • 1 tsp baking soda

Mix syrup, sugar and butter.  Cook over medium heat to boiling.  Stirring constantly.

Continue to cook, without stirring, until thermometer reaches 280 degrees.

Stir in peanuts. Cook, stir frequently, until temp reaches 300 degrees.

Remove from heat and stir in baking soda.

Immediately pour unto greased baking sheet and spread thin.

Cool and break.
