Coyote Ridge Farm's Chicken Vegetable Stewp/Stoup


Ingredients:

2 tbsp Extra Virgin Olive oil
1/2 chopped onion
2 stocks chopped celery
2-3 carrots, chopped
Salt and pepper to taste
1 tsp poultry seasoning
1/4 cup butter
4 tbsp flour
4 cups chicken stock
2 cups cooked and chopped free range chicken
2 cups milk
2 cups egg noodles

 

Directions:

  • In large skillet, heat oil.  Add onion, celery and carrots.
  • Cook over medium high heat until tender.  Push veggies to side and melt butter. 
  • Add flour to butter and make a rue.  Cook rue for a minute or 2. 
  • Slowly add chicken stock to rue and stir continuously to keep it free of lumps.
  • Once all stock is added.  Stir well.
  • Add chicken and milk.  After 5 minutes add noodles.  Cook until noodles are tender.
  • Serve with fresh buttermilk biscuits.
